Watch how it's made

Ingredients

  • Fresh homemade mozzarella
  • 2 chicken breasts
  • Panko breadcrumbs
  • 1 egg
  • Tinned plum tomatoes
  • Oregano
  • Paprika
  • Plain flour
  • Olive oil
  • Salt and pepper
  • Fresh basil

Method

  1. Once you've made your mozzarella, you can get the chicken and tomato sauce ready.
  2. Add the tomatoes to a blender with salt, pepper, oregano and oil. Blend until smooth, then season to taste.
  3. Carefully slice the chicken breasts in half.
  4. Set up three bowls: the first with flour, paprika, oregano and salt; the second with a beaten egg; the third with breadcrumbs, 1 tbsp flour, paprika, oregano and salt.
  5. Dip the chicken in the flour, then the egg, then the breadcrumbs, making sure it's fully coated.
  6. Add enough oil to cover the bottom of a frying pan and put it over a high heat. Fry the chicken until golden, crispy and cooked through, about 5 minutes.
  7. Rest the chicken on kitchen paper and season with salt.
  8. Slice the mozzarella.
  9. Put the chicken on an oven tray, spoon over a good helping of tomato sauce, top with the mozzarella and season with salt, pepper and a drizzle of oil.
  10. Grill until the cheese is melted and bubbling.
  11. Garnish with fresh basil and serve.

Make the mozzarella yourself with our Mozzarella & Ricotta Cheese Making Kit (as in the video). The kit has everything you need to make the cheese: just add milk.
