Good to know

What milk do I need?

Most cheeses work with whole blue top milk. For the Cypriot style cheese, use unhomogenised 'Gold Top' milk, available in most supermarkets. The Greek style cheese needs goat's milk and a little live full-fat yoghurt, and the mascarpone uses double cream.

What do I need at home?

A large, deep stainless steel pan with a lid (not aluminium, non-stick or copper), a large slotted spoon, a long knife, a colander and a glass bowl. Rubber gloves help with mozzarella. A microwave is optional.

How long does each cheese take?

Mozzarella and ricotta take about an hour. Mascarpone takes about an hour, then sets overnight in the fridge. The Cypriot style cheese takes a few hours and is best the next day, and the Greek style cheese takes a few days.

How long does the homemade cheese keep?

About 5 days in the fridge, depending on how much salt you add. Greek style cheese keeps 2 to 3 days dry in the fridge, or up to 3 months under olive oil.
